Lazy Meal: Ground Beef and Veggie Noodle Soup in 15 minutes

Another quick combo of meat and veggies. I cooked enough for dinner and also my lunch tomorrow. I made noodles for dinner as I had this pack sitting in my pantry, and I packed leftover rice with my lunch.

For my veggies, I washed and cut carrot, cucumber, squash, and peeled garlic, taking about 5 minutes.

I had frozen ground beef I put in the fridge to defrost the night before. I find it helpful to portion ground beef and add creases horizontally when storing it. This way, I can freeze it and break portioned chunks off whenever needed. In this case, I was using all of it so it wasn’t a problem.

I cooked the noodles per the instruction, andt hey were very good! The were slightly chewy and not too soft. I used 2/3 of the soup pack that came with it which was just the right amount of flavor for me.

I managed to make two meals in about 15 minutes! The veggies last for at least 1 week for me in the fridge, and ground beef I can freeze and defrost in the fridge the night before. Prepping for this type of cooking is super easy and delicious! Cheap, quick, and healthy compared to most places outside!
